Victor Bouzide founded Nuba nearly 20 years ago with a desire to spread the goodness of his grandmother’s cooking.

 

He did this in a small 15-seat restaurant on Hastings Street which served our now-famous plates and pita wraps.

Every day he was up before dawn (and still is) to pick the best ingredients from the produce depots. In 2006, Ernesto Gomez arrived in Vancouver with extensive international hospitality and business experience and the drive to create something great in Vancouver. He began his relationship with Nuba, like many of our staff do, as a customer. Ernesto loved what Victor was doing and they created a partnership that combined their rich experience and talents.

Often regarded as one of the world’s healthiest cuisines, Lebanese food combines the sophistication and subtleties of European cuisines with the exotic ingredients of the Middle and Far East. Here at Nuba, we offer authentic lebanese cuisine in harmony and rhythm with modern times. We seek out the freshest ingredients— organic and local when available—and handpick them daily. A large portion of our menu items are vegan. All meats are halal, non-medicated, and hormone free. Food and juices are made to order, on the spot.

Original recipes and ingredients have been passed down through several generations, and sincerely nurtured. While the cornerstones of the menu remain unchanged for over a century, many recipes have evolved through time and travel, into a beautiful balance of traditional and contemporary cuisine. The spirit of tradition runs deep at Nuba but not at the expense of our desire to provide our guests with a new and exciting dining experience.
